The menu, arranged by Le Cordon Bleu and Niagara Culinary Institute trained Joshua Groom, has been inspired by the area. "The Niagara region sits geographically in one the best climates to grow fantastic produce. Paired with Ontario; at the least Canadian, sourced proteins. Then to top it off, VQA wines. The quality levels soar through the roof with just doing something that felt natural." Joshua feels blessed to have been born and raised in an area that is so bountiful, with spirit and product.
